Innovating for an italian Palate Since 2011

SPAGO was founded in Sydney in 2011 by chef and entrepreneur Eddie Leung, with a simple idea — to create great Italian food using quality ingredients, fresh pasta and a modern approach to hospitality.

Beginning with a single restaurant in Beverly Hills, SPAGO quickly gained recognition within Sydney’s dining scene, receiving multiple industry awards for its food and hospitality.

Over the years, SPAGO has evolved from a traditional Italian restaurant into a modern, multi-location dining concept, with restaurants across some of Sydney’s leading retail and dining destinations.

Fresh pasta remains at the heart of what we do.

Our pasta is prepared fresh and cooked to order, supported by a kitchen system developed over more than a decade of restaurant operations. By simplifying processes and creating consistent preparation standards, we aim to deliver the same quality and experience across every SPAGO location.

For founder Eddie Leung, this evolution has also meant moving from chef to entrepreneur — focusing not only on the food, but on building the people, systems and infrastructure behind the brand.

Today, SPAGO continues to grow with the same philosophy that started it in 2011:

Great food should be fresh, consistent and uncomplicated.

As we look to the future, our focus is on taking SPAGO to more locations while staying true to what made us different in the first place.
